Mulato [moo-LAH-toh] when dried the peppers are very dark brown, almost black, in color. It is an important chile in Mexican and New Mexico cooking, along with the Ancho and Pasilla chiles.
It is the smoky, licorice, aromatic flavor, as well as its chocolate-black color which gives it its appeal.
