Chipotle [chih-POHT-lay] is actually not a type of chile, it is a smoking/drying process. It is the red Jalapeno chile which has been smoked (with pecan wood) and dried. Not only does it have a unique smoky flavor, but it has a nutty tannic taste as well. Chipotle Chile is known as jalapeno of Capsicum annum.

Uses
Chipotle chiles are used to season New Mexican and Mexican cuisine. Chipotles are used in sauces (chipotle in adobo), Chile Con Carne, Seasonings for snacks, Salsas, Enchilada sauces, and Tex Mex cuisine as well. Great sprinkled on Fish, Pork, Chicken and Beef.

Chipotle Chile is produced in Southern New Mexico, Northern and Southern regions of Mexico.
