There are hundreds of Southwest cookbooks around, but Judy's book is a little different. First of all, she included mostly recipes using red and green chile, starting with some basics most useful to cooks who are new to cooking with chiles. She avoided stuffing it with recipes which used chile as an ingredient for the sake of using chile...i.e."broccoli with chile peppers"etc.

Second, they have made a video to go along with the book. It's not only a "how-to" for some of the trickier aspects of dealing with chile peppers, but also introduces you to the heart of New Mexico's chile country.

The Cookbook - This easy to digest book contains more than 50 recipes. It includes classic dishes using red or green chiles, a selection of favorite side dishes, and a "Nuevo" section featuring newer uses of chile. ("Classic" to us means recipes which do not contain hamburger meat or Cream of Anything soup!

The book describes how to roast green chiles at home and how to prepare red chile sauce from dried pods, two procedures which any aspiring "chile-head " must know! There are also lots of useful tips and tidbits of information about our favorite New Mexico vegetable.
